Jet Fuel Salad Dressing

This is the dressing that makes me want to eat raw vegetables.  And I can have as much as I want because its almost calorie-free ( 5/Tb).   It appears in a Canyon Ranch cookbook published in 1984, Jet Fuel, The New Food Strategy for the High Performance Person.  This tastes better the next day and the day after that.

There are many variations, a few below, be adventurous, find one that you love!

basic recipe, add selected ingredients, see below :

½ tsp salt
½ C red wine vinegar
¼ tsp freshly ground black pepper
1 Tb sugar
2 garlic cloves, minced
2 tsp worcestershire sauce
1 Tb dijon mustard
1 Tb fresh lemon juice
1 C water

my version without the garlic cloves and only ¾ C (6 oz) water and 1 Tb Penzeys Sunny Paris

Italian dressing:
add 1 TB each of fresh oregano, basil and tarragon, finely chopped, or 1 tsp each of the same herbs, dried, crushing them first with a mortar and pestle

Asian dressing:
add 1 tsp curry powder and 1/8 tsp ground ginger

Mexican dressing:
add ½ tsp ground cumin

Tarragon dressing:
add 3 TB fresh tarragon, finely chopped, or 1 tsp dried, crushed with a mortar and pestle
