Pita Chips

heat oven to 375 degrees

6 (8") Pita breads - whole wheat
2 tsp ground cumin
1 tsp coriander
1/2 tsp cayenne pepper
1 tsp garlic powder
1/2 tsp or more, black pepper
1/2 tsp salt
1/4 C olive oil

optional: grated parmesan and cracked pepper

Using kitchen shears, slice open each pita and stack. Cut each round into 8 wedges. In a bowl, mix spices and oil. Toss to coat all pieces. With two rimmed baking sheets, spread pitas, smooth side down. Bake 6 minutes, flip over and bake until fully toasted, about 6 minutes more.
