These potatoes roast to a golden brown color and taste delicious. About three pounds will serve six. Make a lot, you'll want more.
Assorted small potatoes of similar size- fingerlings, new or baby potatoes
small quantity of olive oil
1-2 teaspoons seasoning such as garlic powder, salt and pepper
Preheat over to 425 to 450 degrees. Line a baking sheet with foil. Rinse the potatoes and cut in halves or quarters, so they are evenly sized. Spread on the baking sheet. Sprinkle seasonings and drizzle olive oil. Stir to coat the potatoes. In a single layer, turn potatoes cut side down on the baking pan. Bake until brown and crispy, about 35 minutes, stirring halfway through cooking.
