Crunchy and spicy chips added to an ordinary salad makes it delicious but I must say, baking kale 'sounds' strange but it does dehydrate the vegetable and make it crispy and crunchy. I like sesame soy and ginger fat free dressing and it was perfect with the crispy kale. My husband drizzled honey on his salad with olive oil too. Another serving suggestion.
Ingredients:
a bunch of kale, washed, stems removed and torn into bite size pieces and dried in a salad spinner
olive oil
seasoned salt or other spices such as Old Bay, Italian blend or Mrs. Dash's Salt-free garlic and herb
Preheat oven to 350 F
Line a cook sheet with parchment paper or foil
Drizzle kale with olive oil and sprinkle with seasonings.
Bake 10-15 minutes, until the edges are brown but not burnt. Cool.
