This is my tried and true recipe Passover rolls. They are made from matzoh meal, make them with a large scoop of batter for a sandwich bun. Your family and guests will love them! This recipe is from Lisa Katz on About:Judaism
2 cups water
1 cup oil
3 cups matzah meal
2+ tablespoons sugar (to taste)
1 tsp salt
8 eggs
Bring the water and oil to a boil. Let stand for ten minutes. Add the dry ingeredients. Stir in eggs, one at a time, beating (whisking) well after each egg. Drop onto a greased cookie sheet. I use a large scoop of batter for large buns but they are just as good as small 1" bites.
Bake at 350 degrees for 40-50 minutes. This recipe makes 15 large buns.
